Processed meat is a Group 1 carcinogen. That is a statement about evidence, not risk.
IARC put bacon in the same category as tobacco in 2015, which says how sure scientists are, not how dangerous it is. The attributable-death figures are three orders of magnitude apart.

Processed meat is classified by the International Agency for Research on Cancer as carcinogenic to humans, Group 1, on the basis of sufficient evidence that eating it causes colorectal cancer; red meat is Group 2A, probably carcinogenic, on limited evidence plus strong mechanistic support [s1] [s2]. What that classification does not say is how much cancer it causes, and the confusion between those two things is the single most common error in reporting on this subject. IARC itself addressed it directly: processed meat sits in the same category as tobacco smoking and asbestos, but this does not mean they are equally dangerous, because the categories describe the strength of the scientific evidence rather than the level of risk [s1].
The numbers IARC actually attached
An analysis of data from 10 studies estimated that every 50-gram portion of processed meat eaten daily increases the risk of colorectal cancer by about 18% [s1]. For red meat, where the evidence that it causes cancer is weaker, IARC gave a conditional figure: if the association were proven causal, data from the same studies suggest colorectal cancer risk could rise by about 17% for every 100-gram portion eaten daily [s1].
Those are relative increases on an individual's baseline risk. The absolute scale comes from a different set of numbers in the same document. Citing Global Burden of Disease Project estimates, IARC put the worldwide toll of diets high in processed meat at about 34,000 cancer deaths a year, and — again conditional on causality — diets high in red meat at about 50,000 [s1]. It set those against roughly 1 million cancer deaths a year from tobacco smoking, 600,000 from alcohol and more than 200,000 from air pollution [s1].
The definitions matter and are narrower than most readers assume. Red meat means all mammalian muscle meat: beef, veal, pork, lamb, mutton, horse and goat [s1]. Processed meat means meat transformed by salting, curing, fermentation, smoking or similar processes — hot dogs, ham, sausages, corned beef, jerky, canned meat and meat-based preparations [s1].
What the working group could not conclude
The Q&A published alongside the classification is unusually candid about its own limits. On cooking method: high-temperature or direct-flame cooking produces more polycyclic aromatic hydrocarbons and heterocyclic aromatic amines, but there were not enough data for the working group to reach a conclusion about whether cooking method affects cancer risk [s1]. On whether any level is safe: risk increases with the amount consumed, but the data did not permit a conclusion about whether a safe level exists [s1]. On whether particular groups are more vulnerable by age or sex, and on what any of it means for people who have already had colon cancer: no conclusions were possible [s1].
For red meat, the strongest evidence — still described as limited — is for colorectal cancer, with further evidence of links to pancreatic and prostate cancer [s2] [s1]. For processed meat, the working group concluded it causes colorectal cancer; an association with stomach cancer was also seen, but the evidence was not conclusive [s1].
The 2019 dissent, and why it does not cancel the classification
Four years later a guideline panel convened as the NutriRECS consortium reached what looked like the opposite recommendation. Working from five de novo systematic reviews and applying GRADE, a 14-member panel from seven countries, including three community members, suggested that adults continue their current unprocessed red meat consumption and their current processed meat consumption [s3]. Both were weak recommendations based on low-certainty evidence [s3].
Read closely, the two bodies are not in direct contradiction, because they were answering different questions. IARC assessed hazard — whether the agent can cause cancer — and concluded for processed meat that it does [s1] [s2]. NutriRECS assessed whether the magnitude of benefit from cutting down, weighed against people's stated values and preferences about eating meat, justified a strong population recommendation, and concluded that at low certainty it did not [s3]. The panel also stated explicitly that considerations of environmental impact and animal welfare did not bear on its recommendations [s3].
The NutriRECS guidance drew heavy criticism on publication and the article carries a published correction [s3]. Its practical claim — that the certainty of evidence behind meat-reduction advice is lower than the confidence with which that advice is usually given — is a defensible reading of the same literature IARC assessed, and it is a claim about certainty rather than about safety.
What a reader is actually left with
Three things are reasonably settled. Eating processed meat causes colorectal cancer, and the evidence for that is classified as sufficient [s1] [s2]. The per-portion effect is modest in relative terms, about 18% per 50 grams a day, and small in absolute terms at population scale compared with tobacco or alcohol [s1]. And no threshold below which processed meat is known to be safe has been established, because the data did not allow one to be identified [s1].
Two things are not settled. Whether red meat causes cancer at all — IARC says probably, on limited evidence [s1] [s2]. And whether the size of the benefit from cutting consumption is large enough to justify a strong recommendation to a healthy adult, which is precisely where the 2019 panel dissented [s3]. IARC also noted that eating meat has known health benefits and that it is national governments and WHO, not IARC, that issue dietary recommendations [s1].
